Carotenoids are colored pigments in plants that provide multiple health benefits such as improved vision, enhanced immunity, or protection against cancer. While beta-carotene, the pigment that gives carrots their orange color, is perhaps the most well known carotenoid, others include lycopene from tomatoes and zeaxanthin and lutein from spinach.
