There are three main kinds of carbohydrates: starch, sugar, and fiber. Starch and sugar provide our bodies and brains with energy. Although our bodies can’t digest fiber, it provides a number of significant benefits. The healthiest sources of carbohydrates are fruits, vegetables, beans, and whole grains such as whole-wheat bread and pasta, brown rice, and quinoa.
