Buying Choose high-quality bittersweet or semisweet dark chocolate that contains at least 60 percent cocoa. The lower the percentage of cocoa, the sweeter the chocolate will be.
Storing Wrap in plastic wrap or foil and store in a cool, dry place away from light and odors for up to 1 year. Never store dark chocolate in the refrigerator or freezer.
Healthy tip Milk chocolate and white chocolate contain much more sugar and milk solids than dark chocolate.
