Cool cakes completely on wire racks and store them airtight. Once a cake has been cut, place a piece of plastic wrap against each side of the open cuts to keep the cake from drying. Cakes also stay freshest if they are covered with a cake dome. (For more storage options, see Storing a Cake.)
