Also known as bitter melon. These look similar to a large cucumber with ridged, bumpy skin. The Sri Lankan variety has quite pronounced teeth-like bumps on the skin and is a darker green than the Asian variety, which is more readily available. They are extremely bitter; blanching them in boiling water helps reduce the bitterness.
