The liquid inside the coconut is known as coconut water or juice, and not coconut milk, as is sometimes thought.
Coconut milk (and coconut cream) is the liquid extracted from the grated coconut flesh. In Sri Lanka, coconut cream is known as the ‘first extract’ or ‘thick coconut milk’, and is very thick and creamy. Coconut milk is the ‘second extract’ and is much thinner.
