Tamarind pulp comes from inside the pod of a tamarind plant and is used as a souring agent. You can buy it as a ready-made purée (concentrate), but I prefer to buy the block of pulp that still contains the seeds; this needs to be soaked and strained to make tamarind water. Available from Asian grocers.
