Called a chatty in Tamil and hattiya in Sinhala, these deep clay pots are used to cook directly on an open fire or gas stove, and add a great flavour to dishes. Available from Sri Lankan specialty stores. A new clay pot needs to be seasoned before use: soak it in cold water overnight before you first start cooking with it. Substitute with a cast-iron or heavy-based saucepan.
