Fresh-cooked crab is one of nature’s treasures. Whether winter Dungeness or summer blue crabs, they can quickly be boiled, steamed, or roasted. Start first by humanely dispatching the crab, in the same way as lobster.
Steaming: This is the preferred method, as steamed crabs retain their tasty juices and don’t become water-logged. Bring 1 inch (2.5 cm) of salted water to a boil in a large pot. Put the crab(s) in a steamer basket or insert. Add to the steamer, cover, and cook for 12 minutes for blue crabs and 20 minutes for Dungeness. Using tongs or an oven mitt, remove the crab(s) from the pot and let cool to the touch before cleaning.
