Striped bass (Morone saxatilis), also known as stripers or rockfish, is a native of the East Coast. Like salmon, it swims upstream from salt water to fresh water to spawn. A most sought-after species, it has a subtly sweet flavor and takes well to most cooking methods, especially grilling and baking in a salt crust. Stripers have been introduced into lakes all over the United States, and farmed stripers are available in markets throughout the year.

Orange roughy (Hoplostethus atlanticus), although it’s now more difficult to find, can substitute for almost any mild, firm whitefish when cooked correctly. It has a slightly different texture than halibut, but it has a mild, delicate flavor, and its moist, large-flaked meat stays intact even after the fish is cooked. Deep-frying or grilling is not recommended. The sustainability varies, according to Monterey Bay Aquarium, by individual species and where and how it is caught.
