Black in appearance, these are specially cultivated tree fungi used as an accompanying ingredient and sometimes as a main ingredient. They lend taste to other ingredients and absorb other tastes, which in turn makes them even more succulent. The Japanese cultivate and supply them to Chinese and Western markets, so they are also well known by the Japanese name, shiitake. They have to be reconstituted before use
