While the Chinese adore fish, they abhor the fishy odor and believe that ginger counters this odor most effectively.
To prepare ginger juice, peel a large chunk of fresh ginger, mince it finely or grate it, and then squeeze out the juice with your hand into a container. Discard the pulp. The juice keeps for a long time if refrigerated.
