The wok is also useful for smoking foods. Simply line the inside of the wok with kitchen foil. Add the smoking ingredients (in Chinese cooking, it is usually black tea leaves, sugar and spices). Place your marinated food on an oiled rack. Slowly heat the ingredients and when it begins to burn and smoke, cover the wok tightly. Turn the heat to low and slowly smoke according to the instructions in the recipe.
