Salt is normally sea salt, with a medium-sized crystal. This is known in the US as kosher salt. Avoid the fine-grained table salts: these usually contain additives which may throw the recipes off kilter (and make them too salty, where we give amounts in teaspoons). Of course, everyone has different tastes, so be guided by your own.
