Suet is the hard fat that surrounds the kidneys of most animals. It is widely available in shops, online, or fresh from a good butcher. Generally beef suet was used, but other types existed. We tend to use beef and cannot guarantee the results of using another type of fat. A vegetarian alternative is available.
