The overwhelming popularity of balsamic vinegars has unfortunately almost eclipsed red wine vinegars. Balsamic vinegar is not a substitute for red wine vinegar; it’s a completely different product. A well-balanced, rich, full-flavored red wine vinegar is essential in dressing an Italian salad.
