Spices are used sparingly in Italian cooking. The principal ones are salt, black pepper, hot red pepper (I prefer whole dried chili peppers but crushed red pepper flakes are fine), whole nutmeg, and juniper berries. If you make desserts on a regular basis, keep pure vanilla extract and baking powder in the pantry.
