Whereas in the States making a meal out of a can of tuna would be considered the antithesis of a gourmet meal, in Italy canned tuna is a delicacy. The very best tuna is ventresca, made only from the belly of the tuna and packed in extra virgin olive oil. It is available here in specialty markets and online sources. Be prepared to pay at least thirty dollars for a 12-ounce jar.
