Not really a substitute for fresh porcini, the luscious Italian wild mushroom, dried porcini deliver a concentrated burst of wild porcini mushroom flavor. They can be used to add porcini flavor to fresh cultivated mushrooms or on their own as in the Risotto with Porcini. Dried mushrooms will keep several months.
