In season, look for locally grown tomatoes whenever possible because they usually have the best flavor. Out of season, when you are limited to supermarket tomatoes, use plum tomatoes (sometimes referred to as Romas). The most important thing is not to put them in the refrigerator, as it will rob them of what little flavor they do have.
