Pancetta is basically Italian bacon. The main difference is that pancetta is not smoked but is air cured just like prosciutto and can be eaten as is. In fact, a good pancetta in Italy is often part of a cold cut platter. If it is well wrapped, pancetta will keep up to a week in the refrigerator.
