Zucchini in America. British and Mediterranean imports. For the best flavour, must be absolutely hard when bought. No need to peel, although you should rub hard, scrub or run the back of a knife along them to get rid of any tiny bristles. The youngest, smallest and freshest are the most delicious.
Courgette flowers are sometimes available. These are big yellow affairs attached to an embryonic vegetable. They are washed carefully, then stuffed with anything from ricotta cheese and spinach to minced fish or poultry then lightly braised.
