British and European imports. Commonly available in supermarket cellophane packs. These sprouts of the mung bean should be bought white and full of sap, not yellowing and floppy. Use raw in salads or quickly cooked in stir-fries. Tinned beansprouts are a sour, crunchless pastiche.
