Ball of thick grey-green “leaves” enclosing inedible choke of infant seed head on thick, stemmed, absolutely edible base. Reltive of the thistle. Some British but mainly superior Mediterranean imports. Two main varieties – red (darker and with purplish edges to the leaves) and green. Also keep an eye out for the superb tiny varieties, around 2in long.
Look for firm leaves, quite tightly packed, with some stem attached. Avoid sad, wrinkled specimens and browning edges. Watch for misty white mould. Even healthy ones should be cooked within a day or two of purchase.
