A staple of southern Italy, anchovies are typically eaten on crostini with some good olive oil and a squeeze of lemon; arranged atop pizza; or tossed in a basil, olive, and tomato salad. When added to sauces, such as puttanesca, they break down, imparting an element of umami to the dish.
