Although you’ll find lots of lentil varieties in the best markets, look for Italy’s famed Castelluccio lentils. Varying in hue from pale green to dark brown, they have a thin skin and soft texture attributed to the climate and soil of the mountainous area in Umbria where they are cultivated. They cook quickly, and the nutty flavor pairs beautifully when simmered with pork sausages.
