Before Columbus’s voyages to the New World, the fava, or broad bean, was the staple bean in Europe, where it had been consumed for thousands of years. Favas are harvested in April, and fresh beans are available until about June. As with so many Italian vegetables, favas are best prepared simply, most notably as the Romans do, in a pan sauté that includes pancetta and onion.
