Off the toe of the Italian boot, Sicily is home to a local variation on the more widespread basil pesto from Genoa. Pesto alla trapanese trades out the pine nuts for almonds and adds fresh tomatoes to the purée. The tomato- and eggplant-based pasta alla Norma, named after Sicilian-born Vincenzo Bellini’s opera Norma, is another regional favorite.
