This is another one of the important seasonings in Japanese cooking. Rice vinegar is made from fermented rice and has a mellow, sweet flavour. It is typically used for pickling, dressings and, most famously, for seasoning sushi rice. Again, try to use Japanese rice vinegar for Japanese cooking – Chinese rice vinegar tends to be a little more acidic. Mitsukan is the most widely available Japanese brand.

Rice vinegar is the most common, but there are also other types of vinegar used in Japanese cooking, such as brown rice vinegar and grain vinegar. There are also pre-mixed seasoned rice vinegars or sushi-su (seasoned vinegar made especially for sushi) available, which are pre-mixed with sugar and salt. Be careful not to confuse these with pure vinegar since the flavour will be entirely different.
