Umeboshi is pickled ume, which is a Japanese plum/apricot. It is sold in the form of the whole pickled fruit or as a puréed paste in a jar or tube. Because of the extreme sourness and saltiness, it is often used as a garnish or condiment in very small amounts. After a jar of umeboshi is opened, it should be kept in the fridge.
