Dried small sardines, tazukuri are lightly roasted in a small pan before serving as an accompaniment for drinks or as a snack. They have a distinctive umami (rich flavouring). At New Year’s time they are coated in sugar and served as part of the savoury celebration hamper. They are not only delicious but also very nutritional as they are full of calcium, which is highly beneficial, especially for growing children. Tazukuri are another fish product available outside of Japan.
