Jean-Georges uses two oils regularly: extra virgin olive oil and grapeseed oil. The former is sold everywhere, and needs no explanation. The latter is a light, neutral-flavored oil that is becoming more common but remains expensive and difficult to find; substitute canola or corn oil, but make sure it is fresh and clean.
