Black limes/dried limes (limu amani), are dried in the sun until they become very hard and turn black. They are used to lend a unique sharp, astringent flavour to fishy stews, soups and dishes rich in pulses and meats. They may be punctured, broken open or ground to a powder before being used in a recipe.
