Opening Pomegranates

Pomegranates can be one of the messiest fruits to open, making your walls look like a toddler’s canvas. The following method is efficient and makes capturing the seeds – its scarlet jewels – a more relaxed process.
  1. Use the palm of your hand to roll the pomegranate on the work surface, which loosens the seeds, then cut off the pomegranate crown with a sharp knife. Score the fruit into segments, not cutting through all the way, but making sure to score just enough so that you can easily peel the skin.
  2. Fill a large bowl with water, put the pomegranate in the water and begin to peel apart the scored segments. Discard the skin. Gently pry the seeds apart. All the white pith will float to the top, where you can sift it off with a sieve, and the seeds will sink to the bottom.
