This small citrus green fruit is a native of southern Asia but is now a global favourite. It has a delicate, fresh, tart taste that is widely used in Asia to impart zest to food or as a base for sauces. Both the juice and the peel can add a unique taste dimension to many dishes. One average lime will yield approximately 2 tablespoons of juice and 1½ teaspoons of zest.
