Like rice, noodles provide the substance of nutritious, quick, sustaining meals, as well as the makings of light snacks. Both fresh and dried noodles are available from Chinese or Asian grocers, and may sometimes be found in supermarkets.
Three types of noodles are used in these recipes: beanthread, egg and dried rice.
