This is also known as arachide oil. I prefer to use this for wok cookery because it has a pleasant, unobtrusive taste. Although it has a higher saturated fat content than some other oils, its ability to be heated to a high temperature without burning makes it perfect for stir-frying and deep-frying. Most supermarkets stock it, but if you cannot find it, use corn oil instead.
