This is an intensely flavoured paste of herbs and spices used to flavour coconut curries, soups, and other dishes. Home-made curry paste is time-consuming to prepare. Fortunately, ready-made, high-quality Thai curry pastes are now available in most supermarkets. Thai green curry paste is made with fresh green chillies. Remember: green chillies are much stronger than red. If you prefer your dishes less ‘hot’, use Thai red curry paste, made with red dried chillies, which is less fiery.
