Shallots are mild-flavoured members of the onion family and a very popular item in South-East Asia. They are small with copper-red skins and have a distinctive onion taste without being as overpowering as ordinary onions.
They are universally available, if a bit expensive, but a few go a long way. Keep them in a cool, dry place (not the refrigerator) and peel, slice or chop them as you would an onion. If all else fails you can use small, fresh yellow onions.
