White peppercorns do not occur naturally; they are an artefact. They are made from the largest of the ripe peppercorn berries, which are suspended in running water for several days. The berries swell, making the removal of the outer skin easier; the pale inner seeds are then sun-dried, which turns them a pale beige colour. Hence, white peppercorns. Again, they are best when freshly ground.
