Dark-colored sesame oil, as opposed to the lighter sesame oil, is made from roasted sesame seeds and used in a majority of Korean dishes. It is a healthy oil with a lower smoking point than its lighter counterpart. It is not only used in sauces and marinades but also in stir-fries. The sesame oil in Korea is nuttier and more aromatic then brands found in most supermarkets here, but any dark sesame oil will work in the recipes in this book. Some sesame oil labels will refer to the oil as “roasted.”
