Garlic, a member of the onion family, is one of the most extensively used aromatics in Korean cuisine. It is thought to have therapeutic qualities and also acts as an aid to boosting the immune system. Taekyung says garlic is good for your complexion! A garlic head is comprised of multiple cloves held together in a natural papery skin. Very finely minced garlic, almost pastelike, is used in most of the recipes throughout the book. We peeled several heads and put them in a food processor. We then refrigerated some in a jar and froze some to always have garlic on hand. Minced garlic is available in the produce departments of most supermarkets.
