There are many varieties of green onions in Korea and each is used for a different purpose. We do not have that many choices here so the common green onion (scallion) is used in the recipes. Along with garlic and sesame oil, green onions are used liberally to garnish and flavor many dishes. This mild member of the onion family is much shorter than a leek and both the white and green part are edible. The thinner green onions are good for adding to dressings and sauces; the thicker ones for stir-fries. The tops of the green onions can be used as a substitute for garlic chives.
