Sugar syrup is called for and it is super-easy to make. Simply place equal quantities of caster (superfine) sugar and water in a saucepan and mix well with a spoon. Place the saucepan over medium heat and slowly bring the syrup to the boil. Cook the syrup until the sugar has dissolved, then remove the pan from the heat. Leave the pan to cool before straining the syrup and storing in the refrigerator until needed. The syrup will last for up to 2 weeks in the fridge.
