This form of sugar is made by evaporating the juice of the sugar cane plant. It has not undergone the same degree of processing as refined white sugar, thereby retaining slightly more nutrients, and a more caramel-like flavour. It is used like palm sugar (jaggery) in sweets, and of course to sweeten tea.
