The only difference between plain (all-purpose) flour and self-raising flour is that the latter has had baking powder added, which reacts with heat and liquid in the oven, creating carbon dioxide bubbles that cause cake batters to rise, giving a lighter and more airy texture. You can make your own self-raising flour by mixing baking powder into plain flour; check the ratio recommended by the baking powder manufacturer.
