Clarified ASPIC Molds

Lining and filling a mold with clarified aspic is similar to the process of coating. Choose a mold that is not too deep or too complicated to unmold easily, preferably one with sloping sides, for example a charlotte mold. A metal mold is ideal as it is a good heat conductor and allows aspic to set quickly and unmold cleanly. For an attractive appearance, it is important to start with a generous layer of aspic, coating the base and sides.
Once the first layer of aspic has set, various ingredients can be added for decoration: circles of colorful vegetables such as unpeeled zucchini, radish or carrot are popular. Sometimes the sides are also decorated: favorites are egg whites, truffles, tomatoes, asparagus or sticks of carrot, set vertically. Once in place, these are set with another layer of aspic.
