Removing Corn Kernels from the COB

Kernels can be cut whole from the cob. Alternatively, the juicy pulp can be extracted, leaving the skin behind.
  1. To cut kernels: hold the ear of corn vertically on the board and cut from the tip down to the board with a sharp knife, removing as many whole kernels as possible. A thin layer of pulp will be left.

  2. To extract pulp from the kernels: with a small knife, cut down each row of kernels to split them.

  3. Holding the ear vertically on the board, scrape the pulp from the cob with the back of a knife. The flesh and milk will spurt out, and can be scooped up to use in chowder.
