Slicing Mushrooms

Some recipes call for caps only to be sliced, with stems used for stuffing or soup. However, for an attractive presentation, slice the mushrooms through the stem and cap to make a “tree” shape.
Trim the stem just level with the cap. Hold the mushroom, stem down, and slice vertically through the stem and cap.
ALTERNATIVELY, slice common mushrooms in a food processor. Layer them sideways in the tube and use the slicing blade. Other mushroom varieties tend to be too firm or delicate to slice by machine.
