Baking & Shaping Wafers

Test consistency by baking a single wafer first before shaping a full batch of tulipe or cigarette russe batter.

  1. Grease the baking sheet then add spoonfuls of batter.

  2. Spread it as thinly as possible with the back of a spoon.
  3. Bake the wafers just until brown around the edges. With a sharp flexible knife or metal spatula, lift the wafers off the baking sheet while still hot. If they stick, warm them briefly in the oven.

  4. For cigarettes: curl the hot wafers at once around a wooden spoon handle. If they harden while shaping, return them to the oven briefly until they soften.

  5. For tulipes: Lift the hot wafers from the tray and place on upturned glass tumblers.

  6. Press a ramekin over each wafer and leave to cool on the glasses. The finished tulipes can be filled just before serving.
